The category 'bulk beef' refers to whole, half or quarter beef orders. It does NOT refer to large quantity orders for specific cuts or grinds - we do not offer large quantities of specific cuts or grinds.
Whole and half beeves can be cut to your specifications, please refer to directions in item descriptions.
Our quarter beeves are sold as 'Split Sides', which means half of the front (chuck) cuts and half of the back (round & sirloin) cuts from one side, plus half of the ground beef from that side. Split Sides are cut according to our template.
These store items are for placing an order and making the required DEPOSIT online. Prices are based on the hanging weight of the carcass, therefore final price cannot be known until the beef enters the aging process. Average hanging weight is 650 pounds and varies throughout the year; figure on a minimum of 550 lbs and a maximum of 850 lbs.
At the time you place your order, the steer is still out in the pasture munching grasses; we do not process/hold bulk beef. On receipt of your order, we will immediately schedule the first available processing appointment. Our beef is dry aged for 14-21 days, therefore, you should expect at least 4 weeks before it is available for pick-up or delivery. Once the beef is hanging, the weight and total price can be calculated; the balance of order price is due at delivery.
